Lethal weapon 1 - Last fight. Jet li - romeo must die - workshop + finale The fight against sex machine in from dusk til dawn The "oil" scene in the transporter. I guess the 3-way in SW:E1 was pretty well done.

Oh, and pretty much ALL the spiderman vs Doc Ock fights in spiderman 2...I thought they were done so well.. up and down the side of the buildings, in he back, on and throughout the train, they were just great to watch.

Why.. Kill Bill v.1 is the number one for me, the blue leaf house, amazing.
#2 is Kill Bill v.2 with daryl hannah in the trailer, it's just so goofy and random what they fight with. #3 The lobby room in Matrix reloaded, with all the swords and axes and stuff.
