More or less, this is what Jerk Seasoning is: 1/2 cup allspice berries 1/2 cup brown sugar, packed 6-8 cloves garlic 4-6 Scotch Bonnet or habanero peppers 1 Tbsp. ground thyme or 2 Tbsp. fresh 2 bunches green onions 1 tsp. cinnamon 1/2 tsp. nutmeg 2 Tbsp. soy sauce
