Five most essential zoms? Let's look at this historically. And there's really no way to narrow this down to five:

White Zombie--First zom flick, though the zombies are probably more aptly described as sleepwalkers. Still, it has Bela Lugosi and voo doo.

I Walked With a Zombie--Easily the best of the classic voo doo zoms.

Invisible Invaders--First apocalyptic zom flick and big influence on Matheson's "I Am Legend" which inspired Night.

Dr Blood's Coffin--First decaying zom, and in color!!!!

Plague of the Zombies--First scene of zoms digging out of their graves.

Terror Creatures From Beyond the Grave--First Italian zoms!!!!

Night of the Living Dead--Duh.

Tombs of the Blind Dead--Great film, and it also has the first apocalyptic "open" ending that became standard in this genre.

Zombi--The best Italian zombie movie and the one that really established the plot points, thematic themes, etc of the golden age of zom flicks. And with synthesizer music, dammit!!!!

Return of the Living Dead--Well, nothing really new except here the zoms talk and run.
