It's an octopus, they have tentacles, you can't make a giant octopus without it having giant tentacles. The kraken is a sea legend, PotC is full of different sea legends..Davy Jones, the Flying Dutchman ect. So the giant multi-tentacled monster in this case is a...well, giant multi-tentacled monster, not a representative of insecurities. It's a disney action movie about pirates, I doubt there's supposed to be any depth to the big octopus.
