It's a little "gamey", but not as much so as venison.
Something like less than 3% body fat so it's incredibly lean.
Best grilled and served less than medium with a sear.
Goes well with orange, goes well with beetroot.
I like so make a sauce for mine out of red wine, Worcestershire sauce, garlic and black pepper.
I believe we export quite a bit of it - One of your specialty butchers might have it.
