Pretty sure it was Day of the Dead then. A swarm of zombies pull the head off this soldier guy or something like that. Just googled it but couldn't find a pic.
Another one would be the climax of Underworld. Not exactly a complete decapitation but close. Did any of the Cube or Saw movies have one?
Just remembered - Sleepy Hollow. Plenty of onscreen and implied decapitations. How about High Tension? Speaking of implied decapitations - Seven.
