I just watched that again too - it's not terribly gory, which might be surprising considering the capabilities of the director (perhaps he had his hands full - someone else did the FX).
But this turns out to be the film's virtue - comparing it with
Land of the Dead,
Dawn of the Dead remake and the other contemporary zombie movies, this one is impressively restrained and retains Romero's dark, depressing vision with some nice twists of its own (from his own new script, of course).
