I think it started as a way to make a movie that grosses millions of dollars and spend as little as possible. People saw Blair Witch be super profitable and thought "damn, I could do that in my house.". Its no different than say making a wallet that off branded at target wouldn't even get a second look and should for quality purposes cost $15 and then stamping it with COACH and selling it in a COACH store for $500. People will buy it because they think its unique and only because its unique. FF was creative for a little while and yes the two movies you listed where decent films. But at some point you cant keep being scared by security cameras and fixed position cameras. Technically every FF movie is basically the exact same concept rehashed just like any horror movie. While yes, they give you the feeling of being present and make the experience a little more personal they essentially live on jump scares alone. Lets say you disconnected the hand camcorder and filmed Paranormal Activity as a normal film, would it have been a "good" movie? Take the concept and story, the acting and characters and film it like a normal movie. It would have been terrible, changing the perspective doesn't make the movie good, it makes the camera work interesting.
