Personally:
Havarti. I can eat this stuff like a whale skims plankton...it really is scary...

Cheddar.
Colby-jack.
Pepper Jack
Monterey Jack.
Bleu Cheese
Mozarella.
Camembert

I guess if I had to pick it would be between Cheddar and Monterey Jack...
