... Been really really lazy cooking-wise. Thank GOD for Trader Joe's frozen dinners... Last night it was Chicken Gorgonzola and tonight it was Chicken Serenada, with steamed broccoli with garlic and onions. |
Last night I made something like a nachos.
Used jalapeno & aged cheddar flavoured corn chips. Fried up some sliced beef, chopped onions and sliced sundried tomato in some garlic salt, pepper, and cumin. Added a little Neapolitan sauce, and habanero paste. Threw that on the cornchips, added some vegetarian cheese and some mozarella, into the flavourwave oven it went. While I did that... Fried some chorizo and sliced it, doused it in lemon juice. Chopped cherry tomatoes. Added salt/pepper. Threw in some coleslaw salad (no dressing) with celery, corn and spring onions. Mixed that all together, into I guess a strange salsa type thing. When the cheese melted and browned, I took the hot part of the dish out. Put the aforementioned mixture on top with some light sour cream. Had some lemonade that I made in the sodastream machine, with minimal syrup and actual lemon juice squeezed in. Nice. Tasted "real". |

Grilled cheese and tomato sandwich.
Coffee. Some awesome chicken with garlic sauce last night. |
I'm probably taking my life into my own hands, but I'm eating some tuna rolls I bought at a Check Cashing place. They're actually pretty good!

Made some sun-dried tomato turkey sandwiches tonight for dinner. Sweet tea to drink. |
Some people absolutely hate them.
I'm good with them, though I like them sliced quite finely. Good in sandwiches, GREAT on pizzas and in pasta sauces. They taste similar to both tomatoes, and tomato paste...hard to describe. Ha, tomato jerky. |

Experimented making a MANY layered lasagne and good christ it was rich! Couldn't finish the whole thing. Was it worth all the time? Perhaps... Wish I'd had some ricotta to make the cheese sauce rather than having to thicken up some cheddar white sauce.

I'm enjoying a bowl of cereal and a deep, dark cup of coffee. I actually bought a Folgers blend called Black Silk, which is surprisingly good. |
made a tuna casserole yesterday......I thought it came out pretty good.
6 oz. egg noodles (wide or extra wide), cooked* 1 small can of tuna, drained and flaked with a fork 1 can cream of mushroom soup 1/2 cup milk 1 cup frozen peas, cooked 1/2 cup (or more) grated sharp cheddar cheese 1 cup fresh bread crumbs cooked in 1 T. butter until slightly crisp** fresh grated parmesan cheese http://pinchmysalt.com/wp-content/up...-version-2.jpg my kids wouldn't even try it....."adult" kids at that |
I'd probably stick that one under a grill.
I just ate part of a Cadbury "dairy milk" bar. |

However. Today I had a *cough* 15 dollar chicken tender basket at six flags which really pisses me off because in the past the basket had 6 tenders, a ton of fries, and a really good southern style biscuit. Not worth 15 by any means, but it's six flags. This time is was 4 strips and like 10 fries. No biscuit. Last night I made rotini with garlic bread. |
I never got what a biscuit was... so it's like a bread roll?

Grilled some chicken breast after rubbing in some "trinidad scorpion" chilli paste...apparently this is some of the hottest stuff in the world...and it lives up to that. This shit hakes habanero seem like a mild green pepper.
SO hot. Nice flavour though, and quite good when used sparingly - eg - two drops for a whole chicken breast made the whole thing HOT. Having my morning coffee now. |

Home cooked meat pie.
Here you go guys, I'll just give you the recipe. Ingredients 800g diced chuck beef ½ cup plain flour 3 Tbsp vegetable oil 2 white onions, finely sliced 2 cloves garlic, finely sliced ½ bunch thyme, chopped 4 Tbsp tomato paste 1 cup red wine 1L beef stock 1 Tbsp Worcestershire sauce 2 Tbsp cornflour 4 Tbsp water 2 sheets puff pastry 1 egg, beaten Salt and pepper, to season Toss beef in flour. Heat half the oil in a large saucepan over a high heat. Add half the beef and cook, until well browned and beginning to stick to bottom of pan. Remove and repeat with remaining oil and beef. Set aside. Add onion, garlic and thyme to pan and cook until onion has slightly softened. Add beef and tomato paste and cook briefly, then pour in wine, stock and Worcestershire sauce. Reduce heat to medium-low and simmer for 2 hours, stirring occasionally, or until meat is tender. Mix cornflour with water in a jug, then whisk into pan. Simmer until thickened, then season with salt and pepper. Remove from heat and set aside. Preheat oven to 200c (392 ºF) Fill each pastry/case with cooled beef mixture (about ½ cup per tin). Cut pastry lids to size. then brush one side with egg. Arrange 1 round on top of each pie, egg-side down. Press down and crimp with fingertips to seal. Brush tops lightly with egg. Using a small sharp knife, cut a small steam vent on top of each pie. Bake for 30 minutes or until pastry is deep golden and flaky. |
